Preheat and prepare

Preheat your waffle iron according to the manufacturer's instructions to medium-high heat. Lightly brush or spray both plates with a little melted butter or neutral oil to prevent sticking.

Combine dry ingredients

In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly distributed and there are no clumps.

Mix wet ingredients

In a separate medium bowl, whisk the eggs until frothy. Add the whole milk, melted butter (cool slightly so it doesn't scramble the eggs), and vanilla extract; whisk until combined.

Combine wet and dry

Make a well in the center of the dry ingredients and pour in the wet mixture. Gently fold with a spatula or whisk until just combined — a few small lumps are fine. Overmixing will make the waffles tough.

Optional add-ins

If using chocolate chips, fold them in now. For fruit mixed into the batter (not recommended for very wet fruit), gently fold in a small portion (¼ cup) of berries to avoid excess moisture; otherwise reserve fruit for topping.

Rest the batter

Let the batter rest 5–10 minutes at room temperature. This allows the baking powder to activate and helps produce a light interior and crisp exterior.

Cook the waffles

Pour the recommended amount of batter for your waffle iron (usually ½ to ¾ cup for a standard round or Belgian waffle iron) onto the preheated plates. Close and cook until steam subsides and the waffle is deep golden and crisp, about 3–6 minutes depending on your machine. Remove carefully and transfer to a wire rack set on a baking sheet to keep crisp while you cook remaining waffles. Repeat, brushing the iron with butter or oil as needed.

Warm syrup and prep fruit

If desired, warm the maple syrup in a small saucepan over low heat or in the microwave for about 20–30 seconds. Arrange strawberries, blueberries, and sliced bananas in serving bowls for quick assembly.

Build the Waffle Deluxe

Place one warm waffle on each plate. Top with a generous handful of sliced bananas, halved strawberries, and a sprinkle of blueberries. Spoon warm maple syrup over the fruit and waffle.

Finish with cream, nuts and chocolate

Add a dollop (about 2–3 tablespoons) of whipped cream to each waffle, sprinkle with toasted chopped pecans or walnuts, and scatter chocolate chips if using. Lightly dust with powdered sugar for an elegant finish.

Serve

Serve the waffles immediately so they stay crisp. If making a large batch, keep finished waffles in a single layer on a wire rack in a 200°F (95°C) oven to keep warm and crisp for up to 20–30 minutes.
