    Bring steak to room temperature

    Remove the T-bone from the refrigerator at least 30–45 minutes before cooking (longer for very thick cuts). Pat dry thoroughly with paper towels.

    Season

    Generously season both sides and the edges of the steak with kosher salt (about 1 tablespoon total) and freshly ground black pepper. Press seasoning into the meat so it adheres.

    Preheat pan and oil

    Place a heavy skillet (cast-iron preferred) over medium-high to high heat and let it get very hot, about 5 minutes. Add 2 tablespoons neutral oil and swirl to coat; oil should shimmer but not smoke heavily.

    Sear steak

    Carefully place the T-bone in the hot pan. Let it sear undisturbed for 3–4 minutes until a deep brown crust forms. Flip and sear the other side for 3–4 minutes. For a 1–1.25 inch steak this builds crust prior to finishing. If your steak is thicker (1.5–2 inches), sear 4–5 minutes per side.

    Baste and finish

    Reduce heat to medium. Add 1 tablespoon butter, crushed garlic cloves, and thyme or rosemary to the pan. Tilt the pan slightly and use a spoon to baste the steak with the melted butter and aromatics for 1–3 minutes while monitoring internal temperature. For doneness aim for: 120–125°F rare, 125–130°F medium-rare, 135°F medium. If the steak needs more cooking after searing (thick cuts), transfer the pan to a 400°F oven for 4–8 minutes until your target temperature is reached.

    Rest

    Transfer the steak to a cutting board and tent loosely with foil. Rest 8–10 minutes (longer for thicker cuts). While resting, the internal temperature will rise a few degrees and juices will redistribute.

    Finish and slice

    Optionally top with 1 tablespoon cold finishing butter and sprinkle flaky sea salt. Slice the steak across the grain on the strip and across the bone on the tenderloin side, or serve whole beside the bone for presentation.

    Choose style

    Decide how you want your eggs: fried (sunny-side up or over-easy), scrambled soft, or basted. The following directions are for fried eggs; adjust as needed for scrambled or other styles.

    Heat pan

    When the steak is resting (so everything finishes hot), heat a separate nonstick or stainless-steel skillet over medium-low heat. Add 1 tablespoon butter or oil and let it melt and coat the pan.

    Cook eggs

    Crack eggs into a small bowl (one at a time) and gently slide them into the pan. For sunny-side up: cook undisturbed for 2–3 minutes until whites are set but yolks remain runny. For over-easy: cook 2 minutes, then gently flip and cook 15–30 seconds more. For scrambled: whisk eggs with a pinch of salt and cook, stirring slowly, until soft curds form, about 2–3 minutes.

    Season eggs

    Season the eggs with the reserved 1/4 teaspoon salt and 1/8 teaspoon black pepper just before or immediately after cooking.

    Hold until serving

    If needed, keep eggs warm in a low oven (200°F) on a plate while you slice the steak; avoid overcooking.

Plating & finishing

    Arrange the rested T-bone (whole or sliced) on a warm plate. Place the two eggs beside or on top of the steak as preferred. Spoon any reserved pan juices or butter and aromatics over the steak. Sprinkle chopped parsley for color and a squeeze of lemon if desired. Serve immediately.
