Method
Batter
- 1
Whisk dry ingredients
In a medium bowl combine the all-purpose flour, granulated sugar, baking powder, and salt. Whisk thoroughly to distribute the baking powder and sugar evenly through the flour.
- 2
Combine wet ingredients
In a separate bowl or large measuring cup whisk together the whole milk, egg, melted butter, and vanilla extract until smooth and slightly frothy.
- 3
Make the batter
Pour the wet ingredients into the dry ingredients. Stir gently with a spatula or wooden spoon just until combined and no large streaks of flour remain. Do not overmix; a few small lumps are fine. Let the batter rest for 5 minutes to hydrate the flour and allow the baking powder to start activating.
Cooking & Serving
- 4
Preheat griddle
Place a griddle or large nonstick skillet over medium heat and let it preheat for 5 minutes. The surface should read about 350°F (175°C) if using an infrared thermometer, or a drop of water should sizzle and evaporate quickly.
- 5
Prepare pan
Lightly brush or wipe the griddle with vegetable oil or a little unsalted butter so the surface is lightly coated. Reduce heat slightly if the pan is smoking.
- 6
Cook silver dollar pancakes
Use a teaspoon or small 1-tablespoon scoop to portion batter onto the hot griddle, spacing them about 1 inch apart. Cook the pancakes for about 1 to 1 1/2 minutes, until bubbles form on the surface and the edges look set. Flip with a thin spatula and cook the second side 30–60 seconds more, until golden brown and cooked through. Adjust heat as needed so pancakes brown slowly and evenly.
- 7
Keep warm
Transfer cooked pancakes to a baking sheet and keep warm in a 200°F (95°C) oven while you finish the remaining batter. Recoat the griddle lightly with oil or butter as needed between batches.
- 8
Serve
Serve the silver dollar pancakes warm with maple syrup or a dusting of powdered sugar and fresh berries if desired. These are best eaten the same day for optimal texture.
