    Trim and temper

    Pat the top sirloin roast dry with paper towels. Trim any excessive fat or silver skin, leaving a thin fat cap for flavor. Let the roast sit at room temperature for 30–45 minutes before cooking to promote even roasting.

    Apply dry rub

    Combine kosher salt, black pepper, garlic powder, onion powder, dried thyme, and smoked paprika in a small bowl. Rub the mixture evenly over the entire surface of the roast, pressing lightly so it adheres. Set aside while you prepare the pan and aromatics.

Sear & Roasting Aromatics

    Preheat oven

    Preheat the oven to 425°F (220°C). Position a rack in the center of the oven.

    Sear the roast

    Heat an ovenproof skillet or roasting pan over medium-high heat. Add the neutral oil and heat until shimmering. Sear the roast on all sides, 2–3 minutes per side, until a deep brown crust forms. During the last 30 seconds of searing the final side, add the butter to the pan and spoon the melted butter over the roast to baste it.

    Arrange aromatics

    Transfer the seared roast (if using a skillet, keep it in the same pan) to rest on a bed of the sliced onion, carrots, and celery. Tuck the smashed garlic cloves and rosemary sprigs around the roast. Pour the beef broth into the pan around (not over) the roast to add moisture and collect pan drippings during roasting.

    Roast to temperature

    Place the pan in the preheated oven and roast at 425°F (220°C) for 10 minutes to develop color, then reduce heat to 350°F (175°C) and continue roasting. Roast until the internal temperature, measured with an instant-read thermometer inserted into the thickest part, reaches: 125°F (52°C) for rare, 130°F (54°C) for medium-rare, or 140°F (60°C) for medium. For a 3 lb top sirloin, expect approximately 20–30 additional minutes after the initial high-heat phase depending on desired doneness. Begin checking temperature at 20 minutes after lowering the oven.

    Rest the roast

    Remove the roast from the oven and transfer it to a cutting board. Tent loosely with foil and let rest 15–20 minutes. Resting allows juices to redistribute and the internal temperature to rise ~5–7°F (3–4°C).

    Make au jus (optional)

    While the roast rests, place the roasting pan over medium heat on the stovetop. If the pan is very hot, remove briefly to avoid flare-up and deglaze with the red wine, scraping up fond with a wooden spoon. Add the reserved beef broth or pan drippings (about 1 cup). Simmer 3–5 minutes until slightly reduced. Taste and season with salt and pepper as needed. Strain if you prefer a smooth jus.

    Carve and serve

    Slice the roast thinly across the grain against the muscle fibers. Arrange slices on a platter, spoon a little au jus over the meat or serve it on the side. Sprinkle chopped fresh parsley over the slices for color. Serve with roasted vegetables or mashed potatoes.
