Prepare ingredients
Remove pork roll from refrigerator. If slices are thicker than 1/8 inch, trim to roughly 1/8–1/4" thickness for even cooking. Crack eggs into a small bowl and whisk lightly with a pinch of the salt and a few grinds of black pepper. Set cheese and bread nearby.

Cook pork roll
Heat a large skillet over medium-high heat. Add 1 tsp neutral oil and swirl to coat. Lay the pork roll slices in a single layer (they will curl slightly). Cook undisturbed 2–3 minutes until bottoms are browned and crisp at the edges. Flip and cook another 1–2 minutes until the second side is golden and heated through. Transfer to a plate and keep warm.

Make eggs
Wipe skillet lightly with a paper towel if there is excess grease, leaving a thin film. Reduce heat to medium-low and add 1 tbsp butter. When melted and foaming, pour the whisked eggs into the skillet. Let sit 10–15 seconds until edges begin to set, then gently stir with a spatula, pushing from the edges to the center (soft-scramble method) for 30–45 seconds until soft curds form but eggs are still slightly glossy. Alternatively, for fried eggs: heat skillet over medium, add oil, crack eggs directly into skillet, season with remaining salt and pepper, and cook 2–3 minutes for set whites and runny yolks or 3–4 minutes for firmer yolks; flip for over-easy/medium if desired and cook 15–30 seconds more.
