Method

Prepare Pork Roll

    Slice and pan-fry

    Heat a nonstick or cast-iron skillet over medium heat until hot (about 2 minutes). Lay 8 slices of pork roll in a single layer. Cook without flipping for 2–3 minutes until the bottom browns and the edges begin to render fat. Flip each slice and cook 1–2 minutes more until lightly crisped and browned. Transfer pork roll to a paper-towel-lined plate to drain excess fat.

Cook Eggs

    Scrambled eggs

    Reduce heat to medium-low and wipe out excess fat from the pan, leaving a thin film for flavor. In a small bowl, whisk 2 large eggs with 1 tablespoon milk (optional), 1/4 teaspoon salt and 1/8 teaspoon black pepper until blended. Melt 1 tablespoon butter in the skillet. Pour in eggs and let sit 10–15 seconds, then gently stir with a spatula, pushing cooked edges toward the center. Continue folding until soft curds form but eggs are still moist, about 1–1.5 minutes. Remove from heat immediately to avoid overcooking.

    Assemble eggs on pork

    Place scrambled eggs on top of 4 slices of the cooked pork roll (two slices of pork roll per half sandwich if using two slices per sandwich) or arrange as desired so each sandwich will receive the eggs.

Toast Bread & Melt Cheese

    Split an English muffin or sandwich roll and toast lightly in a toaster or in the skillet until golden. Place toasted muffin halves cut-side up in the still-warm skillet (or under a broiler). Top the side that will contact the filling with 1 slice of American cheese. If using skillet, cover with a lid for 20–30 seconds to help cheese melt; if using broiler, broil 20–30 seconds while watching closely.

Assemble Sandwich

    On the bottom toasted half, arrange 4 slices of the fried pork roll (or the appropriate number to cover the sandwich). Add the scrambled eggs on top of the pork roll, then place the melted cheese-topped toasted half over the eggs to complete the sandwich.

    If desired, spread 1 teaspoon yellow mustard or ketchup on the top bun, or add a few drops of hot sauce or a lettuce leaf for crunch. Serve immediately while hot.

Cleanup & Notes

    Carefully pour off excess pork fat from the skillet into a heatproof container if you wish to save it for later use; wipe skillet with a paper towel when cooled slightly before washing. Adjust pork roll slices per sandwich (commonly 4 slices per sandwich) to desired thickness.
