    Mix and form patties

    In a bowl combine ground beef, kosher salt, black pepper, garlic powder and Worcestershire sauce. Gently mix until just combined — do not overwork. Divide into two equal portions and form 3/4-inch thick patties, pressing a slight dimple in the center of each to prevent doming.

    Cook patties

    Heat a large skillet or griddle over medium-high heat and add neutral oil. When shimmering, add the patties and cook undisturbed 3–4 minutes until a brown crust forms. Flip and top each patty with two cheese slices. Cook another 3–4 minutes for medium (adjust time for desired doneness). Remove patties to a plate and tent loosely with foil.

Mushrooms, Onions & Peppers (M.O.P.)

    Prepare vegetables

    While patties cook (or before), slice mushrooms, onion and bell peppers into even thin strips so they cook uniformly.

    Sauté M.O.P.

    In a large skillet over medium heat, add olive oil and butter. When butter melts and begins to foam, add sliced onions and peppers. Sauté, stirring occasionally, for 4–5 minutes until they begin to soften. Add sliced mushrooms, thyme, salt and black pepper. Continue to cook 5–7 minutes until mushrooms release their liquid and vegetables are nicely caramelized. Stir in balsamic vinegar and cook 30–60 seconds more to deglaze and concentrate flavor. Taste and adjust seasoning.

Assembly & Toppings

    Toast buns

    Butter the insides of the buns. In a clean skillet over medium heat or on the griddle, toast buns butter-side down until golden and crisp, about 1–2 minutes. Remove and keep warm.

    Assemble M.O.P. Burger

    Spread burger sauce or mayonnaise on bottom bun. Place lettuce leaf (if using) then the cheese-topped beef patty. Spoon a generous portion of the warm mushroom, onion & pepper mixture over the patty. Add tomato slice (if using) and top bun. Serve immediately with fries or a side salad.
