Prepare Chicken

Pound & Season
If chicken breasts are thick, butterfly or gently pound them to an even thickness about 1/2 inch for even cooking. Pat dry with paper towels. Combine kosher salt, black pepper, smoked paprika and garlic powder in a small bowl and sprinkle evenly over both sides of the chicken. Rub with olive oil to help seasoning adhere.

Rest
Let the seasoned chicken rest at room temperature for 10 minutes while you prepare other components. This helps flavors penetrate and brings the chicken closer to cooking temperature for even searing.
Cook Bacon & Toast Buns

Place bacon strips in a cold skillet in a single layer. Turn heat to medium and cook until crisp, turning occasionally, about 8–12 minutes depending on thickness. Transfer bacon to a paper towel–lined plate to drain. Reserve 1 teaspoon bacon fat in the pan and discard the rest or save for another use.

Make Kansas City-style Glaze

In a small bowl mix BBQ sauce, honey, apple cider vinegar and Worcestershire sauce until smooth. Taste and adjust sweetness or tang to preference. Keep warm or nearby for glazing the chicken.
Cook Chicken & Glaze

Heat a large skillet or grill pan over medium-high heat until very hot. Add 1 teaspoon olive oil if pan is dry. Add chicken breasts and sear without moving until a golden crust forms, about 4–5 minutes. Flip and cook the other side 3–4 minutes.

Brush the top side of each chicken breast with the Kansas City-style glaze (reserve a little for finishing). Continue cooking until internal temperature reaches 165°F (74°C) — about 2–4 minutes more depending on thickness — while occasionally basting with glaze so it becomes glossy and slightly caramelized. If using thicker breasts, cover pan and reduce heat to medium to finish cooking through without over-browning.

In the final 1–2 minutes of cooking, sprinkle or lay cheddar cheese over each breast and cover the pan briefly to melt the cheese.
Assemble Sandwiches

If using mayonnaise, stir hot sauce into the mayonnaise (optional) and spread on bun bottoms and/or tops.

Place lettuce leaves on the bottom half of each toasted bun, then a slice of tomato. Set the glazed, cheese-topped chicken on the tomato. Top each chicken breast with two slices of crispy bacon (or the equivalent portion), then drizzle a little of the reserved glaze over the bacon if desired.

Top with pickle slices if using, then cap with bun tops. Serve immediately while warm.
Serving & Leftovers

Serve 1 sandwich per person with fries, coleslaw or a simple side salad. Store leftover cooked chicken and bacon in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet or oven to preserve texture and re-crisp bacon in a skillet or under a broiler for 1–2 minutes.
