    Prepare aromatics

    Finely chop the onion until it measures about 1/4 cup. Mince the garlic. If you prefer milder onion flavor, rinse the chopped onion briefly in cold water and drain well, then pat dry.

    Combine ingredients

    In a large bowl, add 1 lb ground beef, 1/4 cup fine dry breadcrumbs, 1 beaten large egg, 1/4 cup chopped onion, 1 tsp minced garlic, 1 tbsp Worcestershire sauce, 1 tsp salt, 1/2 tsp black pepper, and 1 tsp mustard. Using your hands or a fork, gently combine ingredients until just evenly mixed. Avoid overworking the meat — mix until ingredients are distributed but the mixture still looks loose and soft (about 20–30 gentle turns).

    Form patties

    Divide the mixture into two equal portions (about 8 ounces / 225 g each). Gently shape each portion into a round patty about 3/4 to 1 inch thick and slightly wider than the bun you’ll use. Press a shallow dimple in the center of each patty with your thumb — this helps the patty stay flat while cooking.

    Chill (optional)

    For best texture and to help patties hold together, place formed patties on a plate, cover loosely with plastic wrap, and chill in the refrigerator for 15–30 minutes before cooking. If short on time you can cook immediately.

Cooking & Serving

    Preheat pan or grill

    Heat a heavy skillet (cast-iron recommended) or grill over medium-high heat. Add 1 tbsp neutral oil or clarified butter to the skillet and let it shimmer but not smoke. If grilling, oil the grates lightly.

    Cook patties

    Place patties in the hot skillet or on the grill. Cook undisturbed 3 to 4 minutes on the first side until a brown crust forms. Flip once and cook the second side 3 to 4 minutes for medium (internal temperature about 160°F / 71°C for well-done; 140–145°F for medium-rare to medium depending on preference and food-safety choices). If adding cheese, place cheese slices on the patties in the last 1–2 minutes of cooking and cover the skillet or close the grill lid to melt.

    Toast buns

    While the patties finish, spread softened butter on the cut sides of buns. Toast in a separate skillet, on the grill, or in the oven until golden, about 1–2 minutes.

    Place each cooked patty on a toasted bun bottom. Add optional toppings: lettuce, tomato slices, sliced onion, pickles, and any condiments you like. Top with the bun crown and serve immediately.
