Cooking Fats & Seasoning
To Serve (optional)
Method
Prepare Proteins
- 1
Heat pan
Place a large nonstick or cast-iron skillet over medium heat. Add 1 teaspoon neutral oil and let it warm for 30 seconds.
- 2
Cook bacon
Add bacon strips in a single layer. Cook 3–5 minutes per side until crisp or to desired doneness. Transfer to a paper towel-lined plate and keep warm. If using fully cooked bacon, warm 1–2 minutes per side.
- 3
Cook ham
In the same skillet (reserve some bacon fat for flavor), add ham slices and cook 1–2 minutes per side until lightly browned and heated through. Transfer to the plate with bacon and keep warm.
- 4
Cook sausage or scrapple
If using a sausage patty or link: add to skillet and cook 3–4 minutes per side until internal temp reaches 160°F (71°C) and exterior is browned. If using scrapple: add slices and cook 2–3 minutes per side until crisped and warmed. Transfer to the plate and keep warm.
- 5
If cooking multiple proteins, you can cook them sequentially, wiping out excess fat between items if necessary, and keep all finished items warm in a low oven (around 200°F / 95°C).
Cook Eggs
- 6
Prep
Reduce heat to medium-low. Add 1 tablespoon butter to the skillet and let it melt, swirling to coat the surface.
- 7
Fry eggs (sunny-side or over-easy)
Crack the eggs into a small bowl one at a time, then gently slide into the pan. Season lightly with salt and pepper. For sunny-side up: cook 2–3 minutes until whites are set but yolks still runny. For over-easy: cook 2 minutes, carefully flip with a spatula, and cook 15–30 seconds more for a runny yolk; cook longer if you prefer a firmer yolk.
- 8
- 9
Taste an egg; adjust seasoning if needed.
Assemble & Serve
- 10
Place the cooked protein you selected (ham, bacon, sausage or scrapple) on a serving plate. Arrange eggs beside or on top of the protein per diner preference.
- 11
- 12
If serving multiple proteins, offer all on a single plate or family-style, allowing guests to choose.
