Prep Potatoes
If not already cut, peel (optional) and cut russet potatoes into 1/4–1/2-inch thick fries. Rinse under cold water until water runs clear to remove excess starch, then dry thoroughly with a kitchen towel or paper towels.

Par-cook (optional for crisper fries)
Bring a pot of salted water to a simmer. Add potato fries and simmer 3–4 minutes until just starting to soften but not falling apart. Drain and pat completely dry. Alternatively, skip this step and proceed directly to frying/baking.

Fry or Bake
Frying: Heat vegetable oil in a deep skillet or pot to 350°F (175°C). Fry fries in batches for 3–5 minutes until golden and crisp. Remove with a slotted spoon and drain on paper towels; immediately season with 1 tsp salt and 1/4 tsp black pepper. Baking: Toss fries with 2 tbs oil, spread on a single layer on a parchment-lined baking sheet, bake at 425°F (220°C) for 25–35 minutes, turning once, until golden and crisp; season with salt and pepper as soon as they come out.
Brown Gravy

Make a Roux
In a small saucepan over medium heat, melt 2 tbs unsalted butter. Whisk in 2 tbs all-purpose flour and cook, whisking constantly, 1.5–2 minutes until the mixture turns a light golden brown (this removes raw flour taste).

Add Broth and Seasonings
Slowly whisk in 2 cups beef broth until smooth. Add 1 tsp Worcestershire sauce, 1/2 tsp soy sauce, 1/2 tsp onion powder, 1/4 tsp garlic powder, 1/4 tsp black pepper and 1/4 tsp salt. Bring to a gentle simmer, whisking frequently, and cook 4–6 minutes until thickened to a gravy consistency. Taste and adjust seasoning (more salt or Worcestershire for depth). Keep warm on low heat; if gravy becomes too thick, thin with a tablespoon or two of water or additional broth.
Assemble & Serve

Portion fries onto a large serving plate or individual plates, creating a high pile in the center (the classic disco fries presentation).

Layer the cheese: arrange 4 American cheese slices over the hot fries, or sprinkle 1/2 cup shredded mozzarella (or use a mix of both). The heat from the fries will melt the cheese; for quicker melting, place the platter under a broiler for 1–2 minutes on high until the cheese bubbles and softens—watch carefully to avoid burning.

Ladle 1 to 1 1/2 cups of warm brown gravy evenly over the cheese-covered fries, letting it cascade down the pile. Use more or less to your preference.

Serve immediately with 1/2 cup sour cream and 1/2 cup salsa on the side for dipping, or place small dollops of sour cream and spoonfuls of salsa atop the fries as desired.
