    Prepare and Marinate

    Pat calamari rings very dry with paper towels. Place calamari in a bowl and pour buttermilk over them; toss to coat. Let rest 10 minutes while preparing other components (buttermilk helps tenderize and helps coating adhere).

    Make Coating

    In a shallow bowl or rimmed plate, whisk together flour, cornstarch, cornmeal or panko (if using), garlic powder, smoked paprika, kosher salt, and black pepper until evenly combined.

    Heat Oil

    Pour oil into a heavy skillet or pot to a depth of about 1 inch (or use a fryer) and heat over medium-high until it reaches 350°F (175°C) or a small piece of bread sizzles and browns in about 30–45 seconds. Use a thermometer if available.

    Dredge and Fry

    Working in batches to avoid overcrowding, remove a few calamari rings from the buttermilk, let excess drip off, then toss in the flour mixture until evenly coated. Shake off excess. Fry calamari in hot oil 1 to 1 1/2 minutes per batch, stirring gently, until golden and crisp. Do not overcook or they will become rubbery. Use a slotted spoon to transfer to a paper towel-lined tray to drain and lightly season with a pinch of salt while hot.

Salad Greens & Vegetables

    While oil heats or calamari rests, combine mixed salad greens, halved cherry tomatoes, sliced cucumber, thinly sliced red onion, and chopped parsley in a large mixing bowl. Toss gently to mix.

Dressing

    In a small bowl or jar, whisk together olive oil, lemon juice, white wine vinegar, Dijon mustard, honey, salt, and black pepper until emulsified. Taste and adjust seasoning or acidity to preference.

Assemble & Serve

    Dress the salad: pour about half the dressing over the salad greens and toss gently to coat. Reserve remaining dressing for guests to add more if desired.

    Plate: divide the dressed salad among 4 plates (or family-style on a platter). Arrange a generous portion of crispy calamari on top of each salad. Sprinkle capers and grated cheese over the salads if using. Serve immediately with lemon wedges on the side for squeezing over calamari.
