Prepare Fruit

    Wash all fruit thoroughly. Hull and halve or quarter strawberries depending on size. Cut fresh pineapple into 1/2-inch chunks. Core and dice the green apple, then toss the apple pieces with 1 teaspoon fresh lemon juice to prevent browning. Drain canned mandarin segments if using.

    Combine grapes, pineapple, strawberries, apple, and orange/mandarin segments in a large mixing bowl. Keep banana slices separate and add them just before serving to avoid browning and sogginess.

Make Cottage Cheese Mixture

    Place 2 cups well-drained cottage cheese in a medium bowl. If you prefer a smoother texture, briefly pulse the cottage cheese in a food processor or blender for 5–10 seconds until slightly smoother but still retaining some curds.

    Add 1 tablespoon Greek yogurt (optional), 2 teaspoons honey (or maple syrup), 1 teaspoon vanilla extract, 1 teaspoon fresh lemon juice, and 1 teaspoon ground cinnamon (optional). Stir gently until evenly combined. Taste and adjust sweetness or vanilla as desired.

    Fold in 1 tablespoon finely chopped fresh mint. Chill the cottage cheese mixture while you prepare the Jello glaze so flavors meld.

Prepare Jello Glaze

    Bring 1 cup water to a boil. In a heatproof bowl, pour the boiling water over the 3-ounce package of flavored gelatin powder and whisk until completely dissolved (about 1 minute).

    Stir in 1 cup cold water or cold fruit juice (for extra flavor). To cool the gelatin more quickly and make a glaze suitable for drizzling, add an additional 1 cup cold water and place the bowl in an ice bath, stirring occasionally. Allow the gelatin to cool until it is tepid and beginning to thicken slightly but not set (about 10–15 minutes).

    Test the glaze by dripping a little on the back of a spoon — it should coat the spoon lightly and be pourable but not runny thin.

Assemble Platter

    Select a large chilled platter or serving bowl. Spread the fruit mixture evenly across the platter, leaving a small border if you like a tidy presentation.

    Spoon or dollop the chilled cottage cheese mixture over the center of the fruit in one or more mounds, or distribute small spoonfuls evenly around the fruit depending on presentation preference.

    Working quickly while the glaze is still pourable but cool, gently drizzle the tepid Jello glaze over the fruit (not directly into the cottage cheese) to create a light, shiny coating on the fruit pieces. Use just enough to gloss the fruit — about 1/2 to 3/4 cup — to avoid making the fruit soggy. If you prefer, reserve some glaze to brush only on selected pieces for a two-tone look.

    If using banana slices, add them now and gently toss or place on top. Sprinkle 1 tablespoon toasted sliced almonds or chopped walnuts over the salad for crunch. Garnish with fresh mint sprigs and a light dusting of powdered sugar if desired.

    Cover the platter loosely with plastic wrap and chill in the refrigerator for 15–30 minutes to set the glaze lightly and let flavors meld. Do not chill for longer than 1 hour if banana is included to prevent browning.

    Serve the cold salad platter chilled. Provide spoons for scooping both fruit and cottage cheese together. Leftovers can be stored, covered, in the refrigerator for up to 24 hours (glaze will soften and fruit may release juices).
