    Combine marinade

    In a medium bowl whisk together the olive oil, lemon juice, lemon zest, minced garlic, dried oregano, chopped fresh oregano or parsley (if using), kosher salt, black pepper, and red pepper flakes until combined.

    Place the cubed chicken in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, toss to coat thoroughly, then press out excess air and seal the bag or cover the dish.

    Refrigerate and marinate at least 30 minutes and up to 4 hours. (If short on time, 30 minutes will still impart good flavor; longer gives deeper flavor—do not marinate more than 6 hours for texture.)

    If using wooden skewers, soak them in water for at least 30 minutes before threading to prevent burning.

Assemble & Cook

    Preheat grill to medium-high heat (about 400–450°F / 200–230°C). If using a grill pan, heat over medium-high and lightly oil the grates or pan; for broiler, position the rack 6 inches from the element and preheat.

    Remove chicken from the marinade, letting excess drip off (discard leftover marinade). Thread chicken pieces onto skewers, leaving a little space between pieces so heat circulates; each skewer will hold roughly 3–4 pieces depending on size.

    Brush the grill grates or pan with a little oil to prevent sticking. Place skewers on the hot grill or grill pan. Cook for 10–12 minutes total, turning every 3–4 minutes, until nicely charred in spots and an instant-read thermometer inserted into the thickest piece reads 165°F (74°C). If broiling, broil for 4–5 minutes per side, watching closely to avoid burning.

    When cooked, transfer skewers to a plate and let rest 5 minutes to redistribute juices.

To Serve

    Warm the pita or flatbreads briefly on the grill or in a dry skillet (30–60 seconds per side) until pliable and slightly charred.

    Slide chicken off skewers and divide among warmed pitas. Top with tzatziki, sliced tomato, red onion, cucumber (if using), a sprinkle of crumbled feta, and chopped parsley. Squeeze lemon wedges over the fillings to taste.
