Crab Filling

    Prepare aromatics

    Melt 2 tablespoons unsalted butter in a medium skillet over medium heat. Add the minced shallot and cook, stirring, until softened and translucent, about 2–3 minutes. Add the minced garlic and cook for 30 seconds more until fragrant.

    Combine crab

    Reduce heat to low. Add the lump crabmeat to the skillet and gently warm for 1–2 minutes, taking care not to break up the lumps. Remove from heat and transfer crab and aromatics to a mixing bowl.

    Make dressing

    To the warm crab, add 3 tablespoons mayonnaise, 1 teaspoon Dijon mustard, 1 teaspoon Worcestershire sauce, 1 tablespoon lemon juice, 1 teaspoon Old Bay seasoning, 2 tablespoons chopped parsley, 1 teaspoon salt, and 1 teaspoon black pepper. Gently fold together until combined, keeping lumps intact. Taste and adjust seasoning or lemon as needed.

    Prepare bread

    Preheat the oven broiler (or set oven to high broil). Lightly butter one side of each bread slice with the softened butter. Place bread, buttered side down, on a baking sheet lined with foil.

    Assemble melts

    Divide the crab filling evenly among 8 slices of bread, spreading to cover most of each slice but leaving a small border. Sprinkle about 2 tablespoons shredded cheddar and 2 tablespoons shredded Monterey Jack (or provolone) over each crab-topped slice so each gets roughly equal cheese coverage.

    Broil to finish

    Place the baking sheet on the top oven rack 4–6 inches from the broiler element. Broil for 2–4 minutes, watching closely, until cheese is melted, bubbling, and edges of the bread are golden. If you prefer a deeper color, rotate halfway but do not walk away — broilers vary.

    Garnish

    Remove the melts from the oven. Sprinkle a light dusting of paprika and a few extra chopped parsley leaves on top if desired. Let rest 1 minute.

    Serve immediately with lemon wedges and hot sauce on the side. Pair with a small mixed greens salad if desired.
