    Prep the chicken

    Pat the chicken breasts dry with paper towels. If breasts are thick, butterfly or pound to an even 1/2-inch thickness for quick, even cooking.

    Season both sides of the chicken with 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp garlic powder, and 1/2 tsp paprika.

    Heat 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering.

    Add the chicken to the hot skillet and cook undisturbed 4-5 minutes until a golden crust forms. Flip and cook 4-5 minutes more, or until internal temperature reaches 165°F (74°C). Cooking time will vary with thickness.

    Remove chicken to a cutting board and let rest 5 minutes. Slice thinly or shred with two forks into bite-sized pieces.

    While the chicken rests, melt 2 tablespoons butter in the same skillet over low heat. Stir in 1/2 cup hot sauce and 1 teaspoon honey until smooth and warmed through to make tangy buffalo sauce.

    Return the sliced or shredded chicken to the skillet and toss in the buffalo sauce until evenly coated, 1-2 minutes. Remove from heat and keep warm.

Cool Ranch Dressing

    In a bowl whisk together 1/2 cup mayonnaise, 1/4 cup buttermilk, and 2 tablespoons sour cream until smooth.

    Add the dried herbs and seasonings: 1 tsp dried parsley, 1/2 tsp dried dill, 1 tsp dried chives, 1/2 tsp onion powder, 1/4 tsp garlic powder, 1 teaspoon lemon juice, 1/4 tsp salt, and 1/8 tsp black pepper. Whisk until combined and taste; adjust salt or buttermilk for desired thickness.

    Refrigerate the dressing at least 10 minutes to allow flavors to meld (can be made up to 24 hours ahead).

Build & Garnish

    If desired, lightly toast 2 buns or rolls in a dry skillet or oven until golden, about 2-3 minutes.

    Spread a tablespoon of cool ranch dressing onto the bottom half of each bun.

    Divide the sauced buffalo chicken evenly between the two buns, piling on top of the ranch.

    Top with shredded lettuce (about 1 cup per sandwich) and tomato slices (2-3 slices per sandwich). Sprinkle 1 tablespoon blue cheese crumbles over each sandwich if using.

    Add additional ranch or hot sauce to taste, close the sandwiches, slice in half if desired, and serve immediately.
