Mash bananas
Peel and place the ripe bananas in a large mixing bowl. Using a fork or potato masher, mash until mostly smooth with a few small lumps remaining (about 1–2 minutes).

Combine dry ingredients
In a separate bowl whisk together the flour, baking powder, sugar, salt and ground cinnamon until evenly mixed.

Make the batter
Add the dry ingredients to the banana mixture. Gently fold with a spatula or whisk just until combined. The batter should be thick but pourable; if too thick, stir in up to 1–2 tablespoons additional milk. Do not overmix — a few small streaks of flour are fine.

Preheat pan
Place a large nonstick or cast-iron skillet over medium-low to medium heat. Add 1 teaspoon neutral oil (if using) and 1/2 tablespoon butter and swirl to coat. Heat until the butter foams but does not brown (about 2–3 minutes).

Cook pancakes
For each pancake, pour about 1/4 cup batter onto the skillet, spacing pancakes 1–2 inches apart. Cook until small bubbles form on the surface and edges look set, about 2–3 minutes. Gently flip with a spatula and cook the second side until golden brown, about 1–2 minutes more. Adjust heat as needed so they cook through without burning. Repeat, adding remaining butter (about 1/2 tablespoon) between batches.

Keep warm
If making a larger batch, preheat an oven to 200°F (95°C). Transfer cooked pancakes to a baking sheet and keep warm in the oven while finishing the rest.

Stack pancakes and top with sliced banana, toasted nuts if using, and drizzle with maple syrup. Serve immediately.
