Prep & Pan

    Preheat and prepare pan

    Preheat oven to 375°F (190°C). Lightly grease a rimmed baking sheet or shallow baking dish with 1 teaspoon of butter or nonstick spray. Line the pan with foil for easier cleanup if desired.

    Arrange ham and pineapple

    Place the 16 oz Virginia ham steak in the center of the prepared pan. Arrange 6 pineapple rings evenly over the surface of the ham, slightly overlapping if necessary. If using canned pineapple, drain well and pat rings dry with paper towels.

Make the glaze

    Combine ingredients

    In a small saucepan over medium heat, combine 1 cup brown sugar, 2 tablespoons Dijon mustard, 1 tablespoon apple cider vinegar, 2 tablespoons butter, 1 teaspoon ground cloves, and 1 teaspoon ground black pepper. Stir frequently until the butter melts and the sugar dissolves, about 3–4 minutes.

    Simmer to thicken

    Bring the mixture to a gentle simmer and cook, stirring, until the glaze thickens slightly and becomes glossy, about 2–3 minutes. Remove from heat and let cool for 1 minute so it will brush easily without running off immediately.

Glaze, bake & finish

    Brush on glaze

    Using a pastry brush or spoon, brush about two-thirds of the warm glaze over the ham steak and pineapple rings, making sure to coat the exposed edges. Reserve the remaining glaze for basting during baking and for serving.

    Baste and bake

    Place the baking dish in the preheated oven. Bake for 12 minutes, then remove and baste with another layer of glaze. Return to oven and bake an additional 8–10 minutes, or until the ham is heated through and the glaze is caramelized and bubbly. Total bake time should be about 20–22 minutes; internal temp of ham should reach 140°F (60°C) if you use a thermometer.

    Broil for finish (optional)

    If you want a more caramelized top, switch oven to broil on high for 1–2 minutes at the end—watch closely to avoid burning. The glaze should blister and darken slightly.

    Add cherries and rest

    If using, place a maraschino cherry in the center of each pineapple ring immediately after removing from the oven so it warms slightly and adheres to the glaze. Let the ham rest for 3–5 minutes to allow juices and glaze to settle.

    Serve

    Transfer the ham steak to a serving platter, spoon any pan juices and reserved glaze over the top, and garnish with chopped fresh parsley if desired. Slice the ham across the grain into portions and serve with the pineapple rings.
