Form patties
Place the ground beef in a bowl. Add kosher salt, black pepper and Worcestershire sauce. Gently mix with your hands until just combined; avoid overworking. Divide into two equal portions and form into 3/4-inch thick patties, slightly larger than buns. Press a shallow dimple in the center of each patty with your thumb to prevent bulging.

Cook patties
Heat a heavy skillet or grill over medium-high heat and brush with 1/2 tablespoon vegetable oil. When hot and shimmering, place patties (do not press them). Cook for 3-4 minutes on the first side until well browned. Flip and cook 2-3 minutes more for medium; during the last 1 minute place a slice of cheddar on each patty and cover the pan (or close the grill) to melt cheese. Remove from heat and tent with foil to rest for 3 minutes.

Prepare buns and vegetables
Halve the burger buns and spread 1/2 tablespoon unsalted butter on each cut side. Toast buttered buns in a skillet or on the grill over medium heat until golden, about 1-2 minutes per side. Thinly slice red onion into rings (about 1/4 cup), slice tomato into 4 slices, wash and dry lettuce leaves, and set pickles aside.

Assemble toppings
Place 3 slices of cooked bacon on each cheese-topped patty (use whole bacon strips broken if needed).

In a small bowl combine mayonnaise, ketchup, Dijon mustard, smoked paprika and hot sauce. Stir until smooth and taste; adjust hot sauce or salt as desired.

Spread about 1 tablespoon of the sauce on the bottom bun and a thin layer on the top bun.
Assembly & Finish

On the bottom bun (sauced), place lettuce leaf, then the cheese-and-bacon-topped patty, add tomato slices, red onion rings and pickles. Cap with the sauced top bun. Serve immediately.
