Preparation of Base

Prepare the Vanilla
Split the vanilla beans lengthwise and scrape out the seeds. Set aside both the seeds and the pods.

Heat the Cream
In a medium saucepan, combine the heavy cream, granulated sugar, and the vanilla bean pods. Heat over medium heat until the mixture is hot but not boiling, stirring occasionally.

Combine Mixtures
Gradually add the warm cream mixture to the egg yolks in a slow stream while whisking constantly to temper the yolks.

Cook the Mixture
Return the mixture to the saucepan and cook over low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon. Remove from heat, discard the vanilla pods, and stir in the sweet pea extract.
Chill and Serve

Chill the Mixture
Pour the vanilla sweet pea mixture into a bowl and cover with plastic wrap. Refrigerate for at least 4 hours or until completely chilled.

Prepare Garnish
While the mixture is chilling, rinse the fresh sweet peas and mint leaves. Set aside for garnish.

Serve
Once chilled, scoop the vanilla sweet pea mixture into serving bowls. Garnish with fresh sweet peas and mint leaves before serving.
