    Prepare the Crêpe Batter

    In a large mixing bowl, whisk together the all-purpose flour and salt. In another bowl, beat the eggs and then add the milk and vanilla bean paste. Gradually mix the wet ingredients into the dry ingredients until smooth and well combined. Let the batter rest for at least 30 minutes.

    Cook the Crêpes

    Heat a non-stick skillet over medium heat and melt a small amount of unsalted butter. Pour about 1/4 cup of the batter into the skillet, swirling to coat the bottom evenly. Cook for 1-2 minutes until the edges start to lift, then flip and cook for another 1 minute. Transfer the crêpe to a plate and repeat until all the batter is used.

Vanilla Chantilly

    Whip the Cream

    In a chilled mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, whip the cream until soft peaks form. Be careful not to overwhip.

Assembly

    Layer the Crêpe Cake

    On a serving platter, place one crêpe and spread a layer of vanilla chantilly over it. Repeat the process, layering crêpes and chantilly until all the crêpes are stacked and chantilly is used up. Optionally, you can reserve some chantilly for decorating the top.

    Add Berries

    Top the crêpe cake with mixed berries, arranging them beautifully. You can also serve some berries on the side.
