Cake Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

Cream the Butter and Sugars
In a large bowl, beat the unsalted butter, brown sugar, and granulated sugar together until light and fluffy, about 3-4 minutes.

Add Eggs and Vanilla
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine Dry Ingredients
In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

Mix Wet and Dry Ingredients
Gradually add the dry ingredients to the wet mixture, mixing just until combined.

Fold in Raisins and Pecans
Gently fold in the golden raisins and chopped pecans.

Bake the Cake
Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Prepare the Pears
In a saucepan, combine the diced pears, granulated sugar, lemon juice, and water. Cook over medium heat until the pears are tender, about 10 minutes.

Blend the Mixture
Remove from heat and let cool slightly. Blend the mixture until smooth, then chill in the refrigerator for at least 2 hours.

Freeze the Sorbet
Pour the pear mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer to a container and freeze until firm.
Miso Caramel Sauce Preparation

Make the Caramel
In a saucepan, combine the granulated sugar and water over medium heat. Stir until the sugar dissolves, then stop stirring and let it cook until it turns a deep amber color.

Add Butter and Miso
Remove from heat and carefully whisk in the unsalted butter and white miso paste until smooth.

Finish the Sauce
Slowly whisk in the heavy cream until fully incorporated. Let cool slightly before serving.
