1. Season the Pork

Pat the pork chops dry with paper towels. Season both sides generously with salt and black pepper.

2. Prepare the Tamarind Glaze

In a small bowl, mix together tamarind paste, honey, and soy sauce until smooth.

Cooking the Pork Chop

3. Sear the Pork Chops

Heat olive oil in a large skillet over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side until golden brown.

4. Glaze the Pork Chops

Reduce the heat to medium, brush the tamarind glaze over the pork chops, and cook for another 2-3 minutes, turning frequently until the glaze is sticky and caramelized.

5. Rest the Pork Chops

Remove the pork chops from the skillet and let them rest on a plate for 5 minutes before serving.

Preparing the Vegetables

6. Prepare the Garlic

Thinly slice the garlic cloves.

7. Sauté the Vegetables

In the same skillet, add a little more olive oil if needed. Add the sliced garlic and sauté for 1-2 minutes until golden and crispy. Remove and set aside.

8. Cook Broccolini and Baby Kale

In the same skillet, add broccolini and cook for about 3-4 minutes until tender. Add baby kale and fermented peppers for another 1-2 minutes, stirring until the kale wilts.

9. Combine and Serve

Plate the pork chops alongside the sautéed vegetables, and top with crispy garlic.
