Strawberry vinegar

Combine strawberries, white wine vinegar, and sugar in a clean jar or small saucepan.

Gently muddle the strawberries to release juices (if using jar) or bring to a low simmer for 1–2 minutes to help dissolve sugar, then remove from heat. Allow mixture to cool slightly.

Transfer to a jar, seal, and refrigerate at least 2 hours, preferably overnight, to let flavors infuse. Strain through a fine mesh sieve, pressing solids to extract liquid. Discard solids and reserve vinegar. Yields about 3/4 cup.

Chili oil

In a small saucepan, warm the neutral oil over low heat until just warm (do not let it smoke).

Remove from heat and add the dried chili flakes, smoked paprika, and salt. Let steep for 30 minutes to infuse, then strain through a fine mesh sieve into a small heatproof container. Cool to room temperature. Store in refrigerator for up to 2 weeks.

Prepare the drink

If you have prepared crab shell mezcal infusion, measure 2 oz. If not, use a mezcal and add 0.25–0.5 tsp of the strained chili oil into the shaker later to approximate savory note (optional).

Add 2 oz crab shell mezcal, 0.75 oz fresh lemon juice, 0.5 oz prepared strawberry vinegar, 0.5 oz simple syrup, and 1 egg white into a cocktail shaker (without ice).

Perform a dry shake (shake vigorously without ice) for 15–20 seconds to emulsify the egg white and create foam.

Add ice to the shaker (about 1 cup or enough to fill), then shake again vigorously for 12–15 seconds to chill and properly dilute.

Double strain into a chilled coupe or rocks glass (if you prefer ice, serve over one large ice cube). Use a fine mesh strainer to remove any small ice shards and ensure smooth texture.

Using the back of a teaspoon, gently drizzle 0.25 tsp chili oil on top of the foam; it will create a marbling effect and deliver savory heat. If you want a lighter savory note, use a toothpick dipped in the chili oil to make small dots and swirl lightly.

Garnish with a strawberry slice or dehydrated citrus wheel and a microgreen sprig or cilantro if desired. Serve immediately.
