Jerk Marinade Preparation

Mix the Marinade
In a bowl, combine allspice, thyme, cayenne pepper, garlic powder, onion powder, brown sugar, soy sauce, lime juice, ginger, and minced scotch bonnet pepper. Mix well to form a smooth marinade.

Marinate the Steak
Place the ribeye steaks in a ziplock bag or a shallow dish and pour the jerk marinade over them. Seal or cover and let marinate in the refrigerator for at least 1 hour, preferably overnight.

Roast the Potatoes
Spread the seasoned fingerling potatoes on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until golden and tender, flipping halfway through.

Cook the Romano Beans
In a separate pot, bring water to a boil and add romano beans. Cook for about 4-5 minutes until tender but still crisp. Drain and season with salt and pepper.

Prepare the Sauce
In a saucepan over low heat, melt the butter. In a separate bowl, whisk together the egg yolks, tomato puree, and white wine vinegar. Gradually add the melted butter to the egg mixture while whisking continuously until smooth and creamy. Season with salt and pepper to taste.

Cook the Eggs
In a small saucepan, bring water to a boil. Gently add the chicken eggs and cook for 6-7 minutes for soft-boiled eggs or longer for firmer yolks. Remove and place in cold water to stop the cooking process.
