In a large mixing bowl, whisk together the sorghum flour, baking powder, baking soda, and salt until well combined.

Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; some lumps are okay.

Preheat Waffle Iron
Preheat your waffle iron according to the manufacturer's instructions.

Once the waffle iron is hot, pour the appropriate amount of batter (about 1/2 cup) onto the center of the iron and close the lid. Cook until golden brown and crispy, about 5-7 minutes.

Repeat with the remaining batter, keeping finished waffles warm in a low oven if needed.

In a medium bowl, whisk together the chilled coconut cream, maple syrup, and vanilla extract until smooth and creamy.
