Prepare the Dough

    Mix the Ingredients

    In a large bowl, combine the ricotta cheese, all-purpose flour, egg, salt, and nutmeg. Mix until a soft dough forms.

    Form the Gnudi

    Dust your work surface with flour. Take about a tablespoon of the dough and shape it into a small ball. Repeat until all the dough is used. Place the formed gnudi on a floured baking sheet.

Cook the Vegetables

    Sauté the Garlic

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

    Cook the Mushrooms and Peppers

    Add the black trumpet mushrooms and chopped habanada peppers to the skillet. Cook for about 5 minutes until softened.

    Add Rapini

    Stir in the rapini and cook for an additional 3-4 minutes until wilted. Season with salt and pepper to taste.

Cook the Gnudi

    Boil Water

    Bring a large pot of salted water to a boil.

    Cook the Gnudi

    Add the gnudi to the boiling water in batches. Cook for about 3-4 minutes until they float to the top. Remove with a slotted spoon.

    Combine with Vegetables

    Transfer the cooked gnudi to the skillet with the sautéed vegetables. Gently toss to combine.

Serve and Garnish

    Plate the Dish

    Serve the gnudi and vegetable mixture on plates.

    Sprinkle with grated Parmesan cheese and chopped fresh parsley before serving.
