Coleslaw Preparation

Make the Coleslaw
In a large mixing bowl, combine the shredded green cabbage and shredded carrots.

In a separate small bowl, mix together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until well combined.

Pour the dressing over the cabbage and carrots, and toss until all the vegetables are evenly coated.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
Sandwich Assembly

Assemble the Sandwich
Take two slices of marbled rye bread and spread 1 tablespoon of Dijon mustard on each slice.

Layer 4 oz of pastrami on one slice of bread.

Add a generous scoop of coleslaw on top of the pastrami.

Top the coleslaw with a few slices of bread and butter pickles.

Place the second slice of bread on top, mustard side down, and gently press down.
Serving

Serve the Sandwich
Cut the sandwich in half diagonally and serve immediately, or wrap in parchment paper for a portable meal.
