Pasta Preparation

Cook Orecchiette
In a large pot, bring salted water to a boil. Add the orecchiette pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
Pork Sugo Preparation

Cook the Pork
In a large skillet, heat olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.

Add Ground Pork
Add the ground pork to the skillet. Cook until browned, breaking it up with a spoon, about 8-10 minutes.

Incorporate Tomato Paste and Wine
Stir in the tomato paste and cook for 2-3 minutes. Pour in the red wine and let it simmer until reduced by half, about 5 minutes.

Add Tomatoes and Seasoning
Add the crushed canned tomatoes, dried oregano, dried basil, salt, and black pepper. Stir to combine and let the sauce simmer on low heat for 20-25 minutes, stirring occasionally.
Combining and Serving

Combine Pasta and Sauce
Once the sauce is ready, add the cooked orecchiette to the skillet with the pork sugo. Toss to coat the pasta evenly, adding reserved pasta water as needed to achieve desired consistency.

Serve the orecchiette hot, topped with grated Parmesan cheese and fresh basil leaves for garnish.
