Method

Preparation of Roasted Pineapple

  1. 1

    Roast the Pineapple

Preheat your oven to 400°F (200°C). Cut the pineapple into rings or chunks, and place them on a baking sheet lined with parchment paper. Roast for about 15-20 minutes until caramelized and golden brown.

  2. 2

    Cool the Pineapple

Remove the roasted pineapple from the oven and let it cool for a few minutes. Once cooled, chop it into smaller pieces if desired.

Mixing the Drink

  1. 3

    Combine Ingredients

In a cocktail shaker, add the roasted pineapple pieces, Planteray dark rum, and Angostura bitters.

  2. 4

    Muddle the Ingredients

Using a muddler or the back of a spoon, gently muddle the ingredients together to release the flavors of the roasted pineapple.

  3. 5

    Shake the Mixture

Add ice to the shaker and shake well for about 15-20 seconds to chill the mixture.

  4. 6

    Strain the Cocktail

Strain the mixture into a rocks glass filled with fresh ice.

Garnishing

  1. 7

    Add Garnish

Garnish your Old Fashioned with a piece of pineapple leaf and a maraschino cherry on top for a finishing touch.
