Method
Cake Base
- 1
Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- 2
Mix Dry Ingredients
In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
- 3
Cream Butter and Sugar
In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-5 minutes.
- 4
- 5
Combine Mixtures
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- 6
Bake
Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- 7
Cool
Allow the cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
Honey Meringue
- 8
- 9
Add Sugar
Gradually add the granulated sugar while continuing to beat until the mixture holds stiff peaks.
- 10
Incorporate Honey
Drizzle in the honey while still beating until fully incorporated and the mixture is glossy.
- 11
Bake Meringue
Spread the meringue over the cooled cake layers and place under a broiler on low heat for 2-3 minutes until golden brown. Watch carefully to avoid burning.
Quince Filling
- 12
- 13
Simmer
Reduce heat to low and simmer until the quince is tender, about 20-25 minutes. Remove from heat and let cool.
- 14
Strain
Remove the cinnamon stick and strain any excess liquid. Mash the quince slightly to create a chunky filling.
Beeswax Ice Cream
- 15
Combine Ingredients
In a medium saucepan, combine heavy cream, milk, sugar, beeswax, vanilla extract, and a pinch of salt.
- 16
Heat Mixture
Heat the mixture over medium heat, stirring until the sugar and beeswax are fully dissolved. Do not let it boil.
- 17
Chill
Remove from heat and allow to cool to room temperature. Then refrigerate for at least 4 hours or overnight.
- 18
Churn Ice Cream
Churn the chilled mixture in an ice cream maker according to the manufacturer's instructions. Transfer to a container and freeze until firm.
