Salad Preparation

Prepare the Tomatoes

Wash the heirloom tomatoes thoroughly under cold running water. Cut them into wedges or slices, depending on your preference. Place the cut tomatoes into a large salad bowl.

Add the Cheese

Crumble or slice the bergamino di bufala cheese and scatter it over the tomatoes in the salad bowl.

Incorporate Lovage

Rinse the fresh lovage leaves, pat them dry, and gently tear them into smaller pieces. Add the lovage to the salad bowl.

Prepare Pumpernickel Croutons

Cut the pumpernickel bread slices into small cubes. Optionally, toast them in a skillet over medium heat with a little olive oil until crispy. Add the croutons to the salad.

Mix the Vinaigrette

In a small bowl, whisk together the banyuls vinegar, extra virgin olive oil, Dijon mustard, and honey until well combined. Season with salt and freshly ground black pepper to taste.
