    Prepare the Potatoes

    Peel the Russet potatoes and grate them using a box grater or a food processor. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.

    Season the Potatoes

    In a mixing bowl, combine the grated potatoes with salt, black pepper, onion powder, and garlic powder. Mix well to ensure the potatoes are evenly coated with the spices.

    Cook the Hash Browns

    Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the seasoned grated potatoes in an even layer. Press down with a spatula and cook for about 5-7 minutes until the bottom is golden brown.

    Flip and Finish Cooking

    Carefully flip the hash browns using a large spatula or by sliding them onto a plate and then back into the skillet. Cook for an additional 5-7 minutes until both sides are crispy and golden. Remove from the skillet and drain on paper towels.

    In a bowl, combine the crème fraîche, chopped chives, smoked paprika, and lemon juice. Stir until all ingredients are well combined.
