Preparation of Potatoes

    Peel and Cut Potatoes

    Peel the Russet potatoes and cut them into thin strips, about 1/4 inch wide.

    Soak Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Drain and Dry

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel to remove as much moisture as possible.

Frying

    Heat Oil

    In a large heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

    Fry Potatoes

    Carefully add the dried potato strips to the hot oil in batches, avoiding overcrowding. Fry until golden brown, about 4-5 minutes.

    Drain Fries

    Using a slotted spoon, remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil.

Coating Fries

    Season Fries

    While the fries are still hot, sprinkle them evenly with salt.

    Add Herb and Cheese Coating

    In a large bowl, combine the grated Parmigiano-Reggiano cheese, fines herbes, and béarnaise powder. Toss the hot fries in the mixture until they are well coated.

Serving

    Serve Hot

    Serve the fries immediately while they are hot and crispy, garnished with extra fines herbes if desired.
