Combine Meatloaf Ingredients
In a large mixing bowl, combine the ground duck, ground pork, breadcrumbs, eggs, tamarind paste, minced garlic, diced onion, salt, black pepper, and chopped thyme. Mix until well combined.

Form Patties
Shape the mixture into slider-sized patties, about 2-3 inches in diameter. Place them on a baking sheet lined with parchment paper.

Bake Patties
Preheat the oven to 375°F (190°C). Bake the patties in the oven for 25-30 minutes or until they are cooked through and the internal temperature reaches 165°F (75°C).
Pickling Shallots

Prepare Pickling Brine
In a small saucepan, combine the white vinegar, sugar, and salt. Heat over medium heat until the sugar and salt dissolve.

Pickle Shallots
Place the thinly sliced shallots in a heatproof jar. Pour the hot pickling brine over the shallots, ensuring they are fully submerged. Let them sit at room temperature for at least 30 minutes or in the refrigerator for up to a week.

Mix Dough
In a bowl, combine the warm milk, sugar, and yeast. Let it sit for about 5 minutes until foamy. In a mixing bowl, combine flour and salt, then add the yeast mixture and melted butter. Mix until a dough forms.

Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

Let Dough Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

After rising, punch down the dough and divide it into 12 equal portions. Shape each portion into a ball and place them in a greased baking dish.
