Burger Preparation

    Prepare the Beef Patties

    In a bowl, season the ground beef with salt and black pepper. Form into 4 equal patties.

    Cook the Patties

    Preheat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side for medium doneness. In the last minute of cooking, place a slice of raclette cheese on top of each patty to melt.

Red Wine Onion Aioli Preparation

    Make the Aioli

    In a mixing bowl, combine mayonnaise, red wine vinegar, finely chopped onion, minced garlic, and olive oil. Season with salt and black pepper. Whisk until smooth and well blended.

Sauce Perigourdine Preparation

    Make the Sauce

    In a saucepan over medium heat, melt 1 tablespoon of butter. Add finely chopped shallots and cook until translucent. Pour in the red wine and beef stock, and reduce the mixture by half. Stir in black truffle oil and remaining butter until melted. Season with salt and black pepper.

Assembly

    Assemble the Burger

    Toast the milk buns lightly. Spread a generous amount of red wine onion aioli on the bottom half of each bun. Place a raclette-topped beef patty on top, then drizzle with sauce perigourdine. Top with the other half of the bun.
