Preparation of Mornay Sauce

    Make the Mornay Sauce

    In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, whisking constantly until the mixture is bubbly and slightly golden.

    Gradually whisk in the milk, ensuring there are no lumps. Continue to whisk until the sauce thickens, about 5-7 minutes.

    Remove from heat and stir in the Gruyère cheese until melted. Season with nutmeg, salt, and black pepper. Set aside.

Assembly

    Assemble the Sandwich

    Preheat the oven to 375°F (190°C). On a baking sheet, lay out two slices of brioche. Place a slice of smoked ham on each piece.

    Spoon a generous amount of Mornay sauce over the ham, then top with the other slices of brioche to create two sandwiches.

    Spread a little butter on the top slice of each sandwich. Bake in the preheated oven for 10-12 minutes until the bread is golden brown.
