In a separate bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract until smooth.

Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix; a few lumps are okay.

Heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for an additional 1-2 minutes until golden brown.

Whip the Cream
In a medium bowl, whip the heavy cream until soft peaks form.

Gently fold the whipped cream into the mascarpone mixture until fully combined. Be careful not to deflate the whipped cream.

In a small bowl, combine the rolled oats, all-purpose flour, brown sugar, softened butter, and salt. Mix until crumbly.

Spread the oat mixture onto a baking sheet and bake at 350°F (175°C) for 10-12 minutes or until golden brown, stirring halfway through.
