    Chop the onion and spinach finely. In a skillet, heat olive oil over medium heat, add the chopped onion, and sauté until translucent. Add the spinach and cook until wilted.

    In a large bowl, crack the eggs and whisk them together with milk, salt, and black pepper until fully combined.

    Fold the sautéed vegetables and cheddar cheese into the egg mixture.
