    Mix the Meats

    In a large mixing bowl, combine the ground pork and ground turkey. Use your hands or a spatula to mix until evenly combined.

    Add Vegetables

    Add the chopped fresh sage and diced poblano pepper to the meat mixture. Mix thoroughly to distribute the vegetables evenly throughout the meat.

    Season the Mixture

    Sprinkle in the salt, black pepper, garlic powder, onion powder, and red pepper flakes. Mix again until all ingredients are well incorporated.

Cooking

    Form Sausages

    Using your hands, form the sausage mixture into patties or links, depending on your preference. Aim for about 2-3 inches in diameter for patties.

    Cook the Sausages

    Heat a skillet over medium heat. Once hot, add the sausage patties or links. Cook for 5-7 minutes on each side, or until the internal temperature reaches 160°F (70°C) and the sausages are nicely browned.

    Remove the sausages from the skillet and let them rest for a few minutes before serving. Enjoy them warm as part of your breakfast.
