For the Buttermilk Biscuits

    Preheat your oven to 425°F (220°C).

    Mix Dry Ingredients

    In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

    Cut in Butter

    Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

    Add Buttermilk

    Pour in the buttermilk and stir until just combined. Do not overmix.

    Shape Biscuits

    Turn the dough out onto a floured surface. Pat it into a 1-inch thick rectangle. Cut out biscuits using a biscuit cutter or a glass.

    Place the biscuits on a baking sheet and bake for 12-15 minutes until golden brown.

For the Mushroom Gravy

    In a large skillet over medium heat, crumble and cook the breakfast sausage until browned and fully cooked. Remove from the skillet and set aside.
