Halibut Preparation

    Seasoning the Halibut

    Preheat the oven to 375°F (190°C). Season the Alaskan halibut fillets with olive oil, salt, and black pepper on both sides.

    Cooking the Halibut

    In an oven-safe pan, heat olive oil over medium-high heat. Place the halibut fillets in the pan and sear for 3-4 minutes on each side until golden brown. Transfer to the oven and bake for an additional 10 minutes or until cooked through.

Scallop XO Sauce Preparation

    Rehydrating Dried Scallops

    Soak the dried scallops in warm water for about 30 minutes until softened. Drain and shred them into pieces.

    Making the XO Sauce

    In a skillet, heat oil over medium heat. Add minced garlic, ginger, shallots, and sauté until fragrant. Add the shredded scallops and chili paste, cooking for an additional 2 minutes. Add soy sauce and let simmer for 5-7 minutes until thickened.

Mascarpone Grits Preparation

    Cooking the Grits

    In a pot, bring water to a boil. Add stone-ground grits and salt, stirring constantly. Reduce heat to low, cover, and simmer for 20-25 minutes, stirring occasionally.

    Finishing the Grits

    Once the grits are cooked, stir in mascarpone cheese and black pepper. Adjust seasoning to taste.

Tomato Foam Preparation

    Preparing the Tomato Mixture

    In a saucepan, combine diced tomatoes and vegetable broth. Simmer for 10 minutes until tomatoes are soft.

    Using an immersion blender, blend the tomato mixture until smooth. Stir in soy lecithin and blend again until foamy. Season with salt to taste.

Eggplant Preparation

    Sprinkle salt on the sliced eggplant and let it sit for 15 minutes to draw out moisture. Rinse and pat dry.

    Cooking the Eggplant

    In a skillet, heat olive oil over medium heat. Add the eggplant slices and sauté until golden brown and tender, about 5-7 minutes. Season with salt and black pepper to taste.
