Rinse the lentils under cold water until water runs clear to remove dust and excess starch.

In a medium saucepan (or a 3–4 quart pot), combine the rinsed lentils, 4 cups water, turmeric, and 1/2 teaspoon of the salt. Bring to a boil over medium-high heat.

Skim any foam that forms on top. Reduce heat to low, cover partially, and simmer gently until lentils are soft and breaking down, 20–25 minutes for red lentils; yellow toor dal may take 25–30 minutes. Stir occasionally and add a little extra water (up to 1/2 cup) if the dal thickens too much—aim for a slightly creamy, pourable consistency.

When the lentils are tender, mash a bit with the back of a spoon or a small whisk to get a smoother texture. Taste and add the remaining salt (about 1 tsp or to taste). Keep the cooked dal warm on very low heat while you prepare the tarka.

Tarka (Tempering) - Aromatics & Spices

Preparing the aromatics

Heat a small heavy-bottomed skillet or tadka pan over medium heat. Add the oil or ghee and let it warm until shimmering (but not smoking).

Add cumin seeds and mustard seeds. When they begin to sputter and become fragrant (10–20 seconds), add the asafoetida if using.

Lower the heat slightly and add the sliced garlic. Fry, stirring constantly, until the garlic turns a light golden brown (about 1–1.5 minutes). Watch carefully to avoid burning.

Add the chopped onion and sauté until soft and translucent, about 3–4 minutes. Add the ginger and slit green chilies and cook for another 1 minute to release their aroma.

Stir in the chopped tomatoes, ground coriander, and red chili powder. Cook until the tomatoes break down and the oil begins to separate from the mixture, about 4–6 minutes. If the mixture becomes too dry, add a tablespoon of water to loosen it.

Add the garam masala and mix for 30 seconds. Taste and adjust seasoning; remember the dal already has salt, so balance accordingly.

Finishing & Serving

Pour the hot tarka (tempered spice mixture) directly into the warm, cooked lentils. You should hear a sizzle as the tempering hits the dal; if the dal is very hot this will be subtle but aromatic. Stir thoroughly to combine.

If using, stir in the butter or additional ghee for a richer finish. Add the lemon juice and the chopped cilantro. Check seasoning and add more salt, chili, or lemon juice as needed.

Transfer the tarka dhal to a serving bowl. Sprinkle the smoked paprika or roasted cumin powder if using and garnish with extra cilantro.

Serve hot with steamed rice, roti, naan, or as a side to any curry. Leftovers keep in the refrigerator for up to 3 days; reheat gently with a splash of water.
