Rice and water

Method

Preparation

1

Measure

Measure 1 cup of long-grain white rice and place it in a fine-mesh strainer or bowl.

2

Rinse

Rinse the rice under cold running water, swishing with your hand, until the water runs mostly clear (about 30–60 seconds). This removes excess surface starch and prevents clumping.

Cooking

3

Combine rice and water

In a medium saucepan (about 2-quart), combine the rinsed rice, 1.5 cups water, and 1 teaspoon salt. Stir once to distribute the rice evenly.

4

Bring to a simmer

Place the saucepan over medium-high heat and bring the liquid to a gentle boil. Once boiling, reduce heat to low so the surface is barely simmering.

5

Cover and cook

Cover the pan with a tight-fitting lid. Let the rice cook undisturbed for 15 minutes. Do not lift the lid during this time — steam is what finishes the rice.

6

Rest

After 15 minutes, remove the pan from heat but keep it covered. Let the rice rest for 5–10 minutes so the steam finishes cooking and the grains set.

Finish and serve

7

Fluff

Remove the lid. Use a fork to gently fluff the rice, separating the grains and releasing excess steam.

8

Optional finish

If using, stir in 1 tablespoon butter or oil until melted and evenly distributed. Season with freshly ground black pepper to taste and sprinkle with chopped parsley or cilantro for color and freshness.

9

Serve hot immediately as a side or base for your dish.
