Method
Prep & Mix Batter
Prepare dry mix
In a large mixing bowl combine the gram flour, rice flour (if using), turmeric, red chili powder, ajwain or cumin seeds, garam masala (if using), baking soda (if using), and salt. Stir until evenly distributed.
Prepare fresh ingredients
If using onions, slice them thinly and separate into rings. For potatoes, use a mandoline or sharp knife to slice very thinly or julienne; if using cauliflower, break into small florets; if using spinach, wash, chop, and squeeze out excess water. Combine your chosen vegetables/protein in a bowl and add the chopped green chilies and cilantro.
Make batter
Add the fresh vegetable mixture to the dry mix. Pour 1/2 cup of water and gently toss to coat the vegetables with the flour. Add remaining water a little at a time to bring the mixture to a thick, slightly loose coating that will hold together on a spoon but is not pourable (consistency like thick pancake batter that clings to vegetables). Add lemon juice if using. Let the mixture rest 5–10 minutes to hydrate the flour.
Frying
Heat oil
Pour oil into a deep, heavy-bottomed pot or deep-fryer to a depth of about 2–3 inches (enough for fritters to float). Heat over medium-high heat until it reaches 350–375°F (175–190°C) or until a small bit of batter sizzles and rises slowly when dropped in.
Test and adjust
Drop a small pinch of batter into the oil. If it immediately sizzles and browns in about 45–60 seconds, the oil is ready. If it browns too fast, lower the heat; if it sinks and cooks very slowly, raise the heat.
Fry pakoras in batches
Using a spoon or your fingers, gently drop small mounds (about 1–2 tablespoon size, or palm-sized clumps for larger pakoras) of the batter-coated vegetables into the hot oil without overcrowding. Fry 3–6 minutes per batch, turning occasionally with a slotted spoon, until golden brown and crisp on all sides. Maintain oil temperature between 325–365°F (160–185°C) for even cooking.
Drain and season
Use a slotted spoon to remove pakoras and place on a wire rack or paper towel-lined plate to drain excess oil. While still hot, optionally sprinkle lightly with chaat masala or additional salt.
Serve
Serve pakoras hot or warm with mint-coriander chutney and tamarind chutney. They are best eaten within 30 minutes for maximum crispness; if holding, keep in a warm oven (about 200°F / 95°C) on a wire rack to retain texture for up to 20–30 minutes.
