Brewing Instructions

Mashing the Grains
In a large brew kettle, heat 6 liters of water to about 70°C (158°F). Add 10 cups of Pilsner malt to the water to create the mash. Stir well and maintain a temperature of 65°C (149°F) for 60 minutes.

Sparging
After mashing, sparge (rinse) the grains with hot water at around 75°C (167°F) until you collect around 15 liters of wort in your brew kettle.

Boiling
Bring the wort to a boil and add 2 tablespoons of Saaz hops. Boil for 60 minutes, adding the remaining hops with 15 minutes left in the boil.

Cooling the Wort
After the boil, cool the wort rapidly using a wort chiller or by placing the kettle in an ice bath until it reaches around 20°C (68°F).

Fermentation
Transfer the cooled wort to a sanitized fermentation vessel. Pitch the yeast by sprinkling it on top of the wort. Seal the vessel with an airlock and let it ferment at around 10-12°C (50-54°F) for 2-3 weeks.

Bottling
Once fermentation is complete, dissolve 3 tablespoons of priming sugar in a small amount of water and add it to the beer. Bottle the beer in sanitized bottles and cap them.

Conditioning
Let the bottles condition at room temperature for 1-2 weeks to carbonate before refrigerating and enjoying your Pacifico Cerveza.
