    Prepare Ingredients

    Gather all your ingredients. If using tofu, press it to remove excess moisture and cube it. If using chicken, dice it into bite-sized pieces. If using pulled pork, ensure it is warmed up.

    Cook the Protein

    In a large skillet, heat olive oil over medium heat. Add your choice of tofu, chicken, or pulled pork. Season with salt and pepper. Cook until tofu is golden brown and crispy (about 5-7 minutes), or until chicken is cooked through (about 7-10 minutes). If using pulled pork, just warm it up in the skillet for about 2-3 minutes.

    Sauté Vegetables

    In the same skillet, add mixed peppers and mushrooms. Sauté for about 3-5 minutes until they are tender but still vibrant. Add the black beans and cook for an additional 2 minutes until heated through.

    Make Sriracha Aioli

    In a small bowl, combine mayonnaise and sriracha. Stir well until smooth. Adjust the amount of sriracha to taste.

    Assemble the Rice Bowl

    In serving bowls, place a scoop of cooked rice as the base. Top with the sautéed vegetable and protein mixture. Add a generous helping of bean sprout kimchi, sprinkle with chopped cilantro, and drizzle with sriracha aioli.
