Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Mix Dry Ingredients
In a mixing bowl, combine all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well.

Coat the Calamari
Dredge the calamari rings in the flour mixture, ensuring they are well coated. Shake off any excess flour.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Working in batches, carefully add the coated calamari rings to the hot oil. Fry for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Repeat with remaining calamari.
Chipotle Aioli

Combine Ingredients
In a small bowl, combine the mayonnaise, chipotle peppers in adobo sauce, lime juice, minced garlic, and salt.

Whisk the mixture until smooth and all ingredients are well incorporated.

Cover the aioli and refrigerate for at least 30 minutes to allow the flavors to meld.
