SANDWICHES
- 1
Prepare the Pork
In a bowl, combine cumin, chili powder, garlic powder, onion powder, salt, and black pepper. Rub this spice mixture all over the pork shoulder, ensuring it's well coated.
- 2
Slow Cook the Pork
Place the seasoned pork shoulder in a slow cooker. Add lime juice to the slow cooker. Cover and cook on low for 8-10 hours, or until the pork is tender and shreds easily.
- 3
Shred the Pork
Once cooked, remove the pork from the slow cooker and let it cool slightly. Using two forks, shred the pork into bite-sized pieces.
- 4
Prepare the Tacos
Warm the corn tortillas in a skillet over medium heat for about 30 seconds on each side, or until pliable.
- 5
Assemble the Tacos
Place a generous amount of shredded pork in the center of each tortilla. Top with pickled onion, a drizzle of salsa verde, a dollop of sour cream, cotija cheese, and fresh cilantro.
- 6
Serve
Serve the tacos warm with additional lime wedges and salsa verde on the side.
