Fried Green Tomatoes

    Prepare tomatoes

    Wash tomatoes and pat dry. Slice each medium green tomato into 1/3 inch (about 8 mm) thick rounds; you should get about 4–5 slices per tomato depending on size. Set slices on a rack or paper towels to drain while you prepare coatings.

    Set up breading stations

    Arrange three shallow bowls or plates. In bowl 1 combine all-purpose flour and 1 teaspoon kosher salt and 1/2 teaspoon black pepper. In bowl 2 whisk together the eggs and buttermilk until smooth. In bowl 3 combine fine cornmeal, panko breadcrumbs, smoked paprika, cayenne pepper, and remaining 1 teaspoon kosher salt and 1/2 teaspoon black pepper; mix well.

    Bread the tomato slices

    Working in batches to avoid crowding, dredge a tomato slice in the seasoned flour, shaking off excess. Dip into the egg-buttermilk mixture, letting excess drip off. Press into the cornmeal-panko mixture, coating both sides and lightly pressing so crumbs adhere. Place breaded slices on a wire rack; let rest 5–10 minutes so the coating sets.

    Heat oil

    In a large skillet (cast iron recommended) add vegetable oil and heat over medium heat until it reaches 350°F (175°C) or begins to shimmer and a small breadcrumb sizzles immediately when added. If using butter for flavor, add unsalted butter to the oil just before frying and swirl to combine.

    Fry tomatoes

    Fry the breaded tomato slices in a single layer for 2–3 minutes per side, or until golden brown and crisp. Flip carefully with tongs or a spatula. Work in batches and keep oil temperature between 325–350°F (160–175°C) to avoid burning. Transfer cooked slices to a paper towel-lined tray or wire rack; season lightly with a pinch of salt while still hot.

    Finish and garnish

    Arrange fried green tomato slices on a platter, sprinkle with chopped fresh parsley. Serve hot alongside the Fiddler's dipping sauce.

Fiddler's Dipping Sauce

    In a small bowl combine mayonnaise, creamy horseradish, Dijon mustard, hot sauce, lemon juice, smoked paprika, garlic powder, honey, kosher salt, and black pepper. Whisk until smooth and well combined. Taste and adjust seasoning — add a little more honey for sweetness, lemon for brightness, or hot sauce for heat.

    Cover and chill the sauce for at least 15 minutes to let flavors meld. Bring to room temperature before serving if chilled for longer than 30 minutes.
